Beef Butchering

A beloved friend of mine (RIP Bill VanTassel) was a cook while he was serving in the Merchant Marines.  He gave me a booklet that was created by the US Army, and he used, about the proper cutting of beef. I have since scanned the document and present it for your edification.This document can help you understand where the different cuts of meat come from and if you happen to live on a dairy farm or ranch with steer this may help you better understand the butchering process so you don’t have to send your prized bovine to a butcher.
